Quick Venison Tips with Rice

This quick and easy venison and rice recipe will easily have everyone fooled into thinking they are eating beef. You can have this quick weeknight supper on the table in no time.  Just take the venison out of the freezer and cut up the peppers and onion while the meat is defrosting in the microwave.  Try to keep the ingredients on hand for those nights when you just don’t know what to make for dinner.

Venison Tips with Rice
1 tablespoon vegetable oil
1 pound venison stew meat
1 green bell pepper, seeded and cut into strips
1 red bell pepper, seeded and cut into strips
1 small onion, chopped
1 (6.8 ounce) package beef flavored rice mix

DIRECTIONS
Heat the oil in a large skillet over medium-high heat. Add the chunks of venison stew meat, and cook until browned and almost cooked through.
Prepare the beef flavored rice mix according to package directions. While the rice is cooking, add the venison meat, green pepper, red pepper and onion. Simmer, covered until rice is done, meat is cooked through and peppers and onions are tender.

Serves 4

Great with hot vegetables on the side, a green salad or coleslaw (see recipe below).  Round out the meal with dinner rolls.

Variation:  Instead of using the beef flavored rice mix try it with a box of dirty rice mix.

Here is a great coleslaw that I make a lot that goes well with many things and only has three ingredients.  The ingredients aren’t exact because I usually just throw it together:
Broccoli Slaw
1 bag broccoli slaw mix
1/2 jar coleslaw dressing (use sparingly, you can always add more right before serving if needed)
1/2 cup dried cranberries
2 Tablespoons shelled sunflower seeds (optional)

Mix together and refrigerate until serving.

I am not a big fan of bottled dressings but the Marzetti brand coleslaw dressing is delicious.  Look for it in the refrigerated section in the produce isle.
