Barbecued Venison Ribs

This is a great recipe for barbecue ribs.  For a complete meal, try serving with coleslaw and cornbread on the side.

6 lb venison ribs with some loin
meat attached
salt and freshly ground black pepper
for seasoning roast.
2 1/2 cups water
3 cups ketchup
1 tablespoon white vinegar
1/4 cup lemon juice
1/2 cup Worcestershire sauce
1/2 cup 100%  maple syrup
1/2 cup brown sugar
2 medium onions,diced
2 tablespoons chili powder
1/2 teaspoon salt

Preheat oven to 325 degrees.

Sprinkle venison ribs with salt and freshly ground pepper. Place in 5 quart roasting pan in double layer. Roast, uncovered 1 hour. Meanwhile, combine remaining ingredients and mix well.  Pour barbecue sauce over ribs and increase heat to 350 degrees. Bake until ribs just begin to
char on top, about 1 1/2 hours. Turn ribs over, cover pan and bake about 30 minutes longer,until ribs are tender and sauce is thick. To serve,place ribs on serving platter. Pour sauce over ribs.

Note: If you are worried about the venison tasting gamy, increase the vinegar to 3 tablespoons. Taste sauce after mixing and add additional brown sugar to taste (about 1/2 cup).
